It’s that time of year…GRILLING SEASON! and it’s one of our favorites! From steaks, to hamburgers and hot dogs to asparagus ~ there’s nothing quite like the flavors you get from a charcoal grill.
One of oft-overlooked items on the grill are appetizers. Here at KitchenReady we are an equal opportunity griller and that means everything from quick appetizers or veggies to long slow indirected cooking method. One of our favorites is the Bacon Wrapped Onion pedal. We love onions…and we (everyone) loves Bacon. They are a match made in heaven. This is just a unique way to marry them. And with the cool dipping sauce (which really isn’t necessary) to bring out the all the flavors, your tastebuds will be doing a happy dance!
- 1 lb Bacon
- 1 – 2 large sweet onions
- 1/2 – 1 cup (+1 tbsp) of your favorite bbq sauce (or sriracha sauce for a spicy kick!)
- 1/2 cup of REAL mayonnaise
- 1/4 cup of sour cream
- 1 tbsp spicy brown mustard
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp garlic poder or granulated garlic
We used a charcoal kettle grill for this recipe. So go light that charcoal!
Cut off the top and the bottom root of the onion. Then chop in half.
Brush each piece of bacon with some of your favorite bbq sauce (or sriracha) and roll an onion pedal. We found that you get approximately 2 pedals for each piece of bacon. you will find that you do not need any tooth picks to hold in place as the sauce will be enough to stick.
Once you are done, move the coals to one side of the grill for indirect grilling. Place the bacon wrapped pedals on the opposite side of the coals and close the cover. Our temp was about 400˚.
After about 20 minutes we checked and the bacon was cooked, but not crisp – so we added 10 more minutes. 30 minutes was perfect! Go ahead and take them off of the grill and plate. Add the sauce to a bowl in the middle and you have a fantastic appetizer perfect for the summer grilling season!
As you can see…by the time we took the finishing photograph we had sampled a few! But that should be proof positive that this simple recipe is a winner! Enjoy!
